 0.75 cup Flour
 2 tbsp cornstarch

Mix all dry ingredients

add water, and mix until batter has a consistent texture

dip chicken in batter, coating all sides

fry battered chicken until golden brown and cooked all the way through. Note that a wok works very well for frying, likely because it can get the oil hotter and keep it at temperature better than a fry daddy type fryer.

Serve with sauce, as desired. Note that this has enough flavor to stand alone, or be served with a sweet and sour, orange sauce, or ranch.
