A comfort-food dinner, easy to prepare, and perfect for a cold rainy night in!
2.50 lbs boneless skinless chicken breasts or thighs
1 medium white onion, diced (or half of a large white onion)
2 tbsp minced garlic
2 10 oz cans cream of chicken soup
32 oz chicken broth (the large boxes from the grocery store)
1 tsp seasoning salt
1 tsp dried parsley
1 tsp black pepper
1 can (walmart brand) biscuits (8 count, jumbo biscuits - "grands" knockoffs)
1rub the chicken with the pepper and let sit while preparing the rest of the ingredients
2Add all of the ingredients except for the biscuit dough to a 6 quart slow cooker and stir to combine
3Cover and cook on high for 3 hours or low for 6 hours.
4When chicken is cooked through and tender, use two forks to shred the meat. Stir to combine.
5Open the can of biscuits and press each biscuit flat. Cut the biscuits into narrow strips and add to the slow cooker. Stir to combine.
6Cover and cook on high for 1 hour or until the biscuits are cooked. Biscuits should be light and fluffy when finished.
7Serve immediately.
