This one was given to me by a technician I worked with who served the dish at a annual Boondock Saints (I and II) viewing party.
3.50 lbs Flat Iron or Flank Steak
2 Green Bell Peppers
2 Red Bell Peppers
1 Yellow Bell Pepper
1 Large Yellow Sweet Onion
3 Packages Ortega Fajita Seasoning Packets
0.25 cup Apple Cider Vinegar
Flour tortillas

Cut steak into strips about 1/2" wide

Sear steak strips in skillet with one packet of seasoning, then drain

Clean bell peppers, cut into strips no wider than 1/2"

skin the onion, cut into 1/2" wide strips

mix onions, bell peppers, steak, vinegar and remaining seasoning packets to instant pot liner, and mix well

Set instant pot to high pressure, and cook for 10 minutes

At completion, carefully use rapid release

Spoon mixture into empty tortilla, and garnish with Sour Cream, cheese, or other toppings as desired
