My lovely Wife's slightly modified take on a simple oven-baked meal from Grammy's recipe files.

 10 Flour Tortillas
 1 lb Lean Ground Beef
 1 White onion, chopped
 0.50 tsp cumin
 0.50 tsp Garlic Powder
 12 oz refried beans
 1 cup Pace Mild Salsa
 1 package colby jack cheese

Brown Ground Meat and onions, mixing in cumin and garlic powder once the meat begins to brown

preheat oven to 300 degrees

once the meat is completely browned and broken up, add 1 cup salsa, 1 cup cheese, and refried beans (entire can). Heat and mix until it has a consistent texture and is heated through.

spoon mixture into tortillas - wrap them in the form of an enchilada, and lay in the baking dish side by side. The proportions mentioned above should fill 10 tortillas, and one large and one small baking dish.

once all tortillas are filled and placed in the baking dish, cover the entire contents of the dish with salsa, then cover with cheese

bake at 300 degrees for 30 minutes

serve with sour cream and additional salsa, as desired.
