2 Cans (14 oz) Ranch style or black beans
2 cans (14 oz) pinto beans (great northern work, too)
2 cans (14 oz) refried beans
1 14 oz can whole kernel corn
1 lb ground beef or chicken
1 packet taco seasoning mix (2, if using 2 lbs meat)
1 package colby jack or mexican style cheese
tortilla chips (I like the "hint of lime" ones, but any will work)
1

preheat the oven to 350

2

cook meat per the taco seasoning packet instructions (typically, brown the meat, then add seasoning and water, and cook seasoning "sauce" down).

For chicken, i prefer to cook it in the instant pot with the seasoning in the bottom with some water, then shred it when it's cooked.

3

drain all cans of beans and corn

4

put ranch (or black) beans in a 9x13 pan, spread evenly on the bottom

5

add pinto beans to the black beans

6

place meat over black and pinto beans

7

pour corn over the meat, again, spreading evenly

8

spread the refried beans over the top of the mixture

9

cover with cheese

10

place in the oven for 25-30 minutes at 350 degrees - or until cheese is melted, and the mixture is above 160 degrees throughout

11

serve with chips and sour cream.

This pairs well with the salsa on my recipes, as well as the garlic-soy sauce creama.
