A holiday (Christmas Eve) tradition in my family growing up.
1 ham bone
1 1 lb. bag of split peas
1 onion
3 ribs celery
1 large bay leaf
pepper to taste
water

place ham bone in pot

roughly dice the onion

chop celery into chunks

place peas (note, use 2 lbs for larger ham bones), diced onion, chopped celery, and bay leaf in pot

Add enough water to cover the ham bone

Bring to a boil and simmer until peas are very soft.

Remove the ham bone and run the remaining soup through food processor in small batches for a smooth soup.

Pick all ham off bone and roughly chop in food processor.

Add some finely chopped parsley. Correct for seasoning. For a special occasion, add just a touch of dry sherry to the soup before serving.
